Guinness Cake This is a recipe that I received while on one of my many trips to Dublin, Ireland. I went to the Guinness brewery to do some research in their archives. I found this recipe while looking up info on original Guinness posters. Enjoy! Guinness Cake (Direct from St James Gate) This is a lightly flavored cake compared to the other 2 variations 8 oz. butter 8 oz. soft brown sugar 4 eggs, lightly beaten 10 oz. plain flour and 2 level tsps. of mixed spice sieved together 8 oz. seedless raisins 8 oz. sultanas 4 oz. mixed peel 12 Tbsp Guinness 4 oz. walnuts Cream butter and sugar together until light and creamy. Gradually beat in the eggs. Fold in the flour and mixed spice. Then add raisins, sultanas, mixed peel, and walnuts. Mix well together. Stir 4 Tbsp of Guinness into the mixture. Mix into a soft dropping consistency. Turn into a prepared 7 inch cake tin. Back in a very moderate oven, 350-375F and cook for 1 1/2 hours. Let cool. Remove from cake tin. Prick base of the cake with a fork and sthingy over the remaining Guinness. Keep cake for 1 week before eating. If you're looking for more GUINNESS recipes I have compiled what maybe the largest collection of Guinness Stout food and drink recipes. www.perfectpintshoppe.com/recipes.html

EVEN OPRAH LOVES IT www.oprah.com/foodhome/food/recipes/food_20020916_guinnesscake.jhtmlGuinness® Cake Recipe created by Seth Roth and Bryan Devlin Makes about 16 1-inch slices Printer-Friendly Version Guinness CakeAll eyes will be smiling when you serve this cake! The magic ingredient? A cup of Guinness® stout. The beer adds a hint of coffee-like flavor to the cake. If you'd like a non-alcoholic cake, substitute milk for the beer. It's still a great cake! INGREDIENTS 16 T. butter (1/2 lb.) 1 cup dark brown sugar 1 cup sugar 2 1/2 teasthingys baking powder 1 teasthingy ginger 1 teasthingy cardamom 1 teasthingy cinnamon 1/2 teasthingy salt 2 2/3 cups flour 3/4 cup cocoa 1 cup Guinness® stout 6 eggs 8 ounces cream cheese, softened 1/2 cup butter, softened 1 1/2 pounds confectioner's sugar 1 teasthingy vanilla extract In a bowl, cream together the butter and both sugars. In another bowl, mix together the baking powder, spices, salt, flour and cocoa. At the very last moment, add the Guinness to the eggs. (Don't let it sit too long, or the alcohol will begin to cook the eggs!) Add half of the dry ingredients to the butter and sugar mixture and blend, then add half of the wet ingredients. Repeat this process until all the ingredients are combined. Pre-heat the oven to 350°, and line the bottom of at least two 9-inch diameter cake pans with wax paper. (Use as many layers as you like for your own cake.) Divide the batter between pans, and bake until a toothpick inserted into the cake comes out clean, about 25 minutes. Cool cakes in pans for about 10 minutes, then turn them out onto a wire rack and peel off the wax paper. Let the layers cool completely before frosting. In a bowl, beat together the cream cheese and butter until mixed, then beat in the sugar. Finally, add the vanilla. Place one cake layer, bottom side up, on a platter. Spread with frosting, then top with another layer, bottom side down. Repeat with each layer, then spread the remaining frosting smoothly over the top and sides of the cake.

Wow, that second one look yummy... but dayam... a 1/2 pound of butter??? You might as well just stuff it in your arteries without bothering to eat the cake.
I wonder how hard they are to make... if someone gets me some Guiness, I'll try and make one for the Nats Tailgate...

I nominate Smoggy, she brought the subject up afterall. Smart man... Soggy, bring me a bottle of Guiness on Sunday! "Soggy" didn't actually bring up the Guinness cake (Scottyg's fantasy)...I was all about the pity pitcher..although technically this is sort of a pity beer? So, I'll bring the beer if you're going to make the Guinness cake or cupcakes.

And sometimes my fantasies come true (see also Smoggy bringing Patrick a Guinness)
I do find it rather interesting that this has come full circle to the last place team bringing the pity beer for a cake.
This cake is for the tailgate, correct? Are the S&A people going to be there to collect on that?

This cake is for the tailgate, correct? Are the S&A people going to be there to collect on that? 1) Yes, fantasies can come true... 2) I'm a master manipulator... 3) Why do you care? You're getting Guinness cupcakes out of the deal, so shut up!

Are we close enough that they can be Halloween cupcakes? We're close enough if YOU are making them. Otherwise, the nearest pagan holiday is Equinox which happens on that Friday. But you know the deal, we'd have to burn things if we celebrate it!
